200ml recently pressed lemon juice
500g granulated sugar

To make the Premix (produces 850ml, enough for 10)

Making the Cordial: Place every ingredients into a pan, bring to a gentle boil, agitating so the sugar melts. After that, remove from the stove allowing it to reach room temperature fully. Decant to a sealable bottle, cap it keeping it in the fridge, where it will keep for about four weeks.

To make Batch Mix: Pour the specified liquid ingredients in a big jug, let it rest for one hour, then filter it preferably using muslin, making it completely strained.

When ready to serve: Measure 85ml of your premix into a stirring glass packed with ice, and agitate carefully for a minute until cold. Pour to a chilled martini glass or similar, top with some cranberries adding the final touch by giving it a quick spritz of mandarin oil over the top.
